Add all ingredients to a pot and simmer until hot (about twenty minutes), the longer the ingredients simmer together the more the flavors will develop. I should note that I only used 1 cup of cognac instead of brandy because it’s what I had on hand, and it still packed a punch! Serve in a heat proof glass. Came out super yummy and I enjoyed it on a nice post snow day.
My first time making a poached egg and it turned out well! This sweet potato hash brown is inspired by Bilbo’s gardener, Hamfast “The Gaffer” Gamgee, and is loaded with spinach, shredded snowpeas, and corn.
This meal was incredibly flavorful, I really enjoyed the twist of using a sweet potato to make the hash brown, the sweetness of the corn, the added vitamins from the spinach, and the crunchiness of the snowpeas.
After Tom Bombadil rescues the hobbits in the Fellowship of the Ring, he gives them “bread, butter, cheese with herbs, and ripe berries gathered.”
The recipe calls for sourdough baguette, strawberries, blueberries, and feta cheese. If I made this a second time, I would probably sub feta with goat cheese, and add mint and honey to the mix! 🙂
We finally made it to Yellowstone after being in Wyoming nearly three years! We saw a good amount of buffalo and we did most of the touristy sites, so hopefully we can go back one of these days and do the less explored hiking trails.
The Grand Tetons definitely are grand. In addition to the endless amount of beautiful views we got to see a herd of elk and listened to the bull elk call (sounds amazing, like a dinosaur!), we almost got chased off a cliff by chipmunks, we saw a MOOSE, and we caught a glimpse of a teeny tiny little pika.
